2 large Onions chopped
1/2 lb Celery, chopped
3 Lbs Shrimp
1/2 Gal real milk, not that 2% junk
1 Qt heavy whipping cream
1 Red Pepper Diced
1 Bundle Green Onions Diced
6 oz Cooking Sherry
1 fresh or 2 dried Bay leaves
Salt to taste
Pepper to taste
Cayenne Pepper to taste.
Boil the Shrimp shells in 1 Gallon of water then simmer for 30 minutes to get stock. Strain the stock and return to pot.
Sautee the onions and celery in butter until tender.
Add to stock.
Add the Milk and Whipping Cream and slowly bring to a boil.
Reduce the heat and simmer and add the remaining ingredients except the shrimp. Simmer for ten minutes. Mix some corn starch with cold water and add slowly to thicken to desired thickness.
Add the shrimp and simmer until the shrimp are done.
Add salt,pepper and cayenne last to taste.
