Ingredients List

2 medium potatoes, each cut into 8 wedges
olive or vegetable oil
seasoned salt, or salt & pepper, garlic powder, paprika (whatever spices float your boat)
3/4-1 c. sour cream
1/3-1/2 c. shredded Cheddar
sliced scallion rings (optional)

Preparation Instructions

Place potato wedges, cut side down, on rack in broiler pan. Brush with oil; sprinkle with seasoned salt or spices.
Set oven to broil &/or 550*. Broil with tops 3" from heat til browned~5 minutes. Turn; brush with oil. Sprinkle with seasoned salt. Broil til tender~5 minutes.
Spoon sour cream onto center of good sized serving plate. Over top the sour cream, sprinkle cheese & scallion rings.
Arrange wedges around sour cream & dip into sour cream mixture when cooled enuf to eat.

Serves 4-8, depending on appetites. This recipe can be easily increased if you want to serve it as a potato accompaniment to a meal.
