1/2 teaspoon olive oil
1/4 cup thinly sliced red onion
3 cups chopped fresh spinach
1/4 teaspoon dried oregano
4 oz shredded mozzarella cheese, divided
2 (6-inch) pita breads
2 plum tomatoes, sliced
10 large shrimp, cooked & peeled
Heat oil in a small skillet over medium heat. Cook onion one minute. Add spinach & oregano; cook one minute or until spinach is wilted.
Sprinkle 1/4 cup of cheese on each piece of pita bread. Top with spinach mixture, tomatoes, shrimp and remaining cheese.
Place pitas on baking sheet; bake in preheated 400 degrees F oven 10 minutes or until cheese is melted.
Less than 400 calories per pizza. Heart healthy!
