Pamlico Blue Crab Soup

Ingredients List

2 Tbsp butter
1 medium onion, finely chopped
1 Tbsp flour
2 cups warm water
1/2 lb. lump crab meat
1/4 cup chopped celery
1 Tbsp parsley, finely chopped
Salt and Pepper to taste
Few drops tabasco
3 cups milk, scalded (just before boiling)
Touch of nutmeg (optional-use very small amount!)


Preparation Instructions

Heat butter in a heavy saucepan. Add onion and celery and cook to soften. Blend in the flour and heat stirring constantly until mixture bubbles. Remove from heat. Gradually add the water, stirring constantly. Return to heat and bring rapidly to boiling and cook 2 minutes longer stirring constantly. Stir in the crab meat, parsley, salt, pepper and Tabasco (and nutmeg if using). Simmer 30 minutes. Just before serving, stir in the scalded milk. Serves 5 to 6 people.
