Zucchini Bread

Ingredients List

Preheat Oven to 350

3 eggs, beat lightly
2 cups grated zucchini (skin on)
2 teas vanilla
1 cup canola oil or vegetable
2 cups sifted all-purpose flour
2 teas baking soda
1/4 teas baking powder
1 ½ cups sugar
1 cup chopped walnuts
1 teas salt
1/2 teas cinnamon

Preparation Instructions

In a large bowl, stir in eggs, sugar, oil, vanilla and grated zucchini. Stir all together flour, salt, baking soda, baking powder, and cinnamon. Add to first mixture. Add chopped walnuts and blend well. Spoon batter into 2 well greased loaf pans (8x5x3) medium size or a bundt pan and one small loaf pan. Bake for one hour or until center of bread springs back when lightly pressed with fingertips. Let cool for 10 minutes before removing from pan. Sprinkle with confectioner’s sugar.
