Chinese Chicken Salad

Ingredients List

SALAD:
1 bag coleslaw mix
2 pkgs. Beef Ramon Noodles
1 - 9oz. cooked chicken breast, cubed
1 small bag of slivered almonds
1 small bag of sunflower seeds (no shell)
1 bunch green onions, chopped
DRESSING:
2 seasoning packets from noodles
1 cup oil
1/2 cup sugar
1/3 cup rice wine vinegar

Preparation Instructions

Dressing and Salad can be made a day ahead and stored seperately in fridge.
Dressing: in small mixing bowl combine all ingredients and stir until well blended. Cover and refrigerate until right before serving. Overnight is fine.
Salad: crumble noodles (do not cook!), add coleslaw mix, almonds, seeds, onions and chicken. Cover and refrigerate until serving.
To Serve: stir dressing (sugar will have clumped to bottom of bowl, this is ok) pour over salad and mix until well coated.

This was served at my Junior Miss meeting and everyone loved it so much that I take it anytime we have a potluck. Not sure where it has originated from but I make it with or without chicken.
