Cangrejo y Camarón Enchiladas

Ingredients List

1/2 cup chopped fresh mushrooms
2 bunches chopped green onions (more or less)
4 tablespoons butter
1 & 1/2 cups SMALL cooked shrimp
12 oz. fresh (or frozen) crab, picked over
1 cup half & half
12 oz. cubed cream cheese
8 oz. shredded Swiss cheese
8 good quality flour tortillas



Preparation Instructions

Sauté the mushrooms and 1/2 the green onions in the butter until onion is tender.

Stir in the seafood, half & half and cream cheese. Cook over a medium heat, stirring constantly until the cream cheese is melted.

Spoon about 1/4 cup of the filling in center of each tortilla and roll up.

Place enchiladas in a lightly greased baking dish. Sprinkle with Swiss cheese.

Bake at 350 degrees until Swiss cheese is melted, about 20 minutes.

Sprinkle with remaining green onions.


Recipe Background

I usually make these for a Sunday brunch while we are at the beach. Mimosas go well with them. My mom has made them using crepes instead of tortillas. They are delicious either way .... and making crepes are a pain in the butt.
