2- 2 1/2 lb. boneless beef
1/4 cup Soy sauce
1 TB Brown sugar
1 tsp ground ginger
1 clove garlic, minced
4 tsp Cornstarch
2 TB cold water
8 individual french loaves or sub rolls
Preparation Instructions
Trim excess fat from beef. Place meat in a 4 qt. slow cooker; combine soy sauce, brown sugar, ginger and garlic and pour over top. Cover and cook on low-heat setting for 7 to 9 hours; or on high setting for 3 to 4 hrs.
Remove meat from juices. Pour juices into a measuring cup; skim fat. Measure 1 1/2 cup juices (add water if necessary); place in a saucepan. Stir together cornstarch and the 2 TB of cold water; add to saucepan. Cook and stir until thickened and bubbly. Shred the meat and add to the sauce. Cook and stir for 2 mins. more.
Fill rolls with meat mixture.
