Pecan Tuna with Southern Comfort Peach Sauce

Ingredients List

4 4-8oz. fresh Tuna Fillets
1 Tbs. Flour
1 Each Egg Wash
1 Cup Pecans - crushed fine
4 Med. Peaches - skinned and diced
6 oz. Southern Comfort
4 Tbs. Heavy Cream
Butter

Preparation Instructions

Heat the butter in a saute pan on high heat (do not burn.) Coat filets with flour, dip in egg wash and coat with pecans. Press pecans on to fillets. Saute 3 minutes on each side, depending on thickness. When done, remove from pan and put on warm plate. Place in a warm oven. Drain off excess butter and return to oven. Add peaches and saute for 1 minute. Deglaze with Southern Comfort and flame. After flame, add heavy cream and reduce to desired consistency. Pour sauce directly over tuna. Serve hot. Yeild: 4 servings.
