Ingredients List
2 bell peppers.
1 large onion.
1 28oz can of diced tomatoes.
1 1/2 cups chicken stock.
1 tbs of chili powder.
1 tbs of cumin.
1/2 tbs of oregano.
1/2 tbs of garlic powder.
As many dashes of hot sauce as you can stand.
About 3 cups or so of cooked turkey (cubed).
2 cans of black beans.
1 1/2 cups frozen corn kernels.
Salt and pepper.
Preparation Instructions
Coarsly chop peppers and onion and cook in a couple of tsp of oil (I used canola) until onion is translucent (about 5 minutes).
Add the cooked turkey followed by the seasonings and stir to combine.
Add tomatoes, chicken stock, hot sauce (I used Texas Pete), salt and pepper. Stir and simmer about 20 minutes.
Add beans and corn and season again with salt and pepper and more hot sauce if you need more heat.
Simmer about another 20 minutes or so.
I served this with corn bread.
