1/2 lb Kasseri or Kefalotiri cheese*
1 Tbs. butter or margarine, melted
2 Tbs. brandy
cocktail bread, crackers or pita bread wedges
*available in fancy cheese shops or Middle Eastern food stores, if unavailable, substitute mozzarella
Cut cheese into good size chunks. Place in shallow heat-proof serving dish. Brush with melted butter or margarine.
Set oven to broil and/or 550*. Broil cheese with top 4-6" from heat until bubbly & lightly brown, about 5-6 minutes.
Heat brandy until warm (DO NOT BOIL), and pour over cheese. Ignite immediately. Squeeze lemon over cheese.
Dip crackers into cheese, or spread onto crackers with a spreading knife.
Impress your guests with this flaming appetizer.
