Ingredients List

3/4 C sugar
1 envelope Knox (or other) unflavored gelatin
1 1/2 C water
1 C sour cream
1 1/2 tsp vanilla
1 - 8oz container Cool Whip

berries or sliced fruits of choice -- i like blueberries, strawberries, raspberries, peaches

Preparation Instructions

In a saucepan mix together the sugar & granules of gelatin.
Add the water & stir together over LOW heat to dissolve.
Remove from heat.
Blend in the sour cream & vanilla.
Chill til slightly thickened.
Blend in the thawed Cool Whip.
Chill in a 1 quart mold or in individual sherbet dishes/glasses (if using glasses, remember to leave room for the fruit on top)
Chilling takes about 3 hrs for the mold, a bit less for individual glasses.

Unmold the final product, and scoop each serving (or serve each person an individual glass)- topping each with fruits of choice.

Serves approximately 6-8. Recipe doubles well, of course you need a bigger mold, or more glasses.

This recipe was given to me by a friend of a friend, the dear Russian lady where it originated.
It's a nice, light dessert for a hot summer day.
