Ingredients List
12 oz fully cooked sausage cut into 1/4" slices (we like Italian sweet sausage with this dish)
1 1/2 C coarsley grated zucchini
3/4 tsp salt
1 C Ricotta cheese
1/4 C milk
1/8-1/4 tsp freshly ground black pepper
dash garlic powder
1/3 C chopped onions
1 Tbl butter or margarine
8-12 oz spinach or plain linguine or fettucini, cooked
Grated Parmesan cheese, if desired, for top.
Preparation Instructions
Place zucchini in a colander, sprinkle with 1/2 tsp of the salt & set aside to drain.
Whisk together ricotta, milk, 1/4 tsp salt, pepper & garlic powder til smooth.
Add sausage, stirring to coat.
Cook onions in butter til lightly browned.
Press excess moisture from zucchini, stir zucchini into onions. Add sausage mixture.
Heat on medium 8-10 minutes.
Pour over hot pasta.
Sprinkle with Parmesan if desired.
Serve immdiately.
Serves 3-4

no real history. i cut this out of a newspaper years ago, looking for ways to use up all the zucchini.
We like it. A different take on a pasta sauce....sorta alfredo-ish.
