Ingredients List
1 pint oysters; 2 stacks saltine crackers; 1 stick butter; 1/4 cup chopped green onions; 2 garlic cloves chopped; 1/4 cup chopped celery; 1/2 tsp. cayenne pepper; 1-1/4 cup milk: salt & pepper to taste.
Preparation Instructions
Drain oysters, reserve liquid; crumble the saltine crackers(fine); in a skillet, melt 1/3 of the butter and sautee onions, garlic, celery, cayenne, and a dash of salt & pepper just till vegetables are tender, remove from heat. Melt remaining butter in microwave; grease a casserole baking dish, spread 1/4 of cracker crumbs, 1/4 of the melted butter, then 1/3 the oysters, spoon on 1/3 the sauteed mixture; Repeat this process 2 more times, then cover with remaining cracker crumbs, then remaining melted butter on top. Mix together warmed milk and reserved oyster liquid and pour evenly over casserole. Bake at 350 for 30 to 40 minutes or until top starts to brown. Serves at least 6 unless one of them is Me!

My mom made this dish she called "scallopped oysters" without the veggies and spice, and with just a little butter for a hundred years. It was good, but it was always kinda dry. I love oysters and I luvvvvv butter, so I thought I'd jazz it up a bit. Made this for Christmas dinner today and it was big hit! Hope you enjoy it!
