2 cups sliced, peeled Ginger Root
2 cups sugar
2 cups water
Place sliced ginger in saucepan. Add sugar and water. Boil on medium heat until reduced by half. Remove from heat and strain out ginger pieces, reserving the syrup.
In a tall glass, add juice of one lime wedge, 2 tablespoons of ginger syrup, and ice. Fill will Club Soda and stir. Enjoy!
Ginger slices from syrup mixture can be placed on a baking sheet, sprinkled with sugar, and put in oven on very low heat (200 degrees) for an hour or so to dry. After slices are dry, they can be enjoyed as Ginger Candy.
I honestly can't remember where I found this recipe. I almost think it was in the "Parade" section of the Sunday newspaper.
