2 chicken breasts, skinless, boneless
24-30 sml asparagus spears
2-4 Tbl homemade or bottled oil & vinegar dressing (bottled Italian or Caesar works fine)
1/2 c sliced scallions
~ 1 tsp salt
~ 1/4 tsp fresh ground black pepper
2 Tbl lightly toasted sesame seeds
cut chicken breasts into 8-10 strips, ~ 1"wide X 6"long
wrap each strip corkscrew fashion around a bundle of 3 or 4 spears (toothpix are not necessary)
spray baking dish lightly with Pam
place wrapped spears in dish
salt & pepper, to taste
drizzle salad dressing over wrapped spears
sprinkle top with sliced scallions
Bake covered in preheated 350* oven 15 minutes
remove cover & sprinkle sesame seeds over. continue baking, uncovered for an additional 15 minutes
this serves 4-5 ppl. allow at least 2 bundles per person.
Very quick & easy - good with a rice & peas side & a salad.
these are also EXCELLENT served chilled over a bed of Romaine as a main dish salad.
