Ingredients List
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries (frozen berries work great too)
1 pound strawberries
1 cup pineapple
1/2 cup Blackberries - optional
2 tablespoons white sugar
1 tablespoon brown sugar
2-3 tablespoons fruit preserves, any flavor (surgar free and seedless varieties work great)
10 (10 inch) flour tortillas (fat free work well)
butter flavored cooking spray (I cant believe its butter spray works well)
2 cups cinnamon sugar
Preparation Instructions
In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, pineapple, blackberries, white sugar, brown sugar and fruit preserves.
Cover and chill in the refrigerator at least 1 hour.
Preheat oven to 350 degrees F (175 degrees C).
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet (parchment paper works well)
Sprinkle wedges with cinnamon surgar.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges.
Allow to cool approximately 15 minutes.
Serve with chilled fruit and spice mixture.
Recipe Background
Wonderful recipe! Its great to have at the beach and healthy too. We usually make a double batch and have it for several days. The cinnamin chips are great but you can also enjoy this on waffles, pancakes, angel food cake, pound cake or graham crackers if you run out of chips!
