Pecan Pie

Ingredients List

Four eggs
1 and 1/4 cups Karo
1 and 1/2 cups shelled pecans, broken up
1 cup white sugar
4 tablespoons of butter
1 teaspoon of vanilla extract

Preparation Instructions

First mix the sugar into the Karo in a heavy pan and bring this mixture to the boil. Let it boil for about a minute, stirring and keeping your eye on it.
Then beat the eggs --not too much, but do mix them up well -- then pour the hot syrup into them, stirring all the while.
Then stir in the butter, the vanilla, and the nut meats. Turn it all into a pie shell and bake at about 350 degrees about 45 minutes.
It should be set when done, but not allowed to get too brown.

Oh yes, the pie shell. Work 1/3 cup of lard into one cup of salted flour with your fingers (that's if you have cold hands; do like you do to make biscuits if you don't have cold hands) Work maybe four tablespoons of water, one at a time, into the flour with a fork. Ball it up and roll it out.
