2 cups self-rising flour
1/3 cup shortening
3/4 cup and 1 tbsp. buttermilk
Combine flour and shortening in mixing bowl. Cut in shortening until it looks like coarse meal. Stir in buttermilk. *Turn out on a floured board. Knead lightly 3-4 times. Roll 1/2 inch thick and cut with 2 1/2 inch cutter. Place on ungreased baking sheet. Bake at 450 F for 10-12 minutes. Yields 10 biscuits.
* Or make biscuits by rolling and shaping by hand!
My friend Kathy's mother Joan makes these and gave me this recipe after we had breakfast with them a few times. Joan shapes them by hand and they are delicious!
