No real measuring here
As many tomatoes as you have guests-medium size
fresh parsley chopped
salt and pepper to taste
olive oil and red wine vinegar
Cut the top off the tomatoes and core. Save the insides and chop up. Mix this with the onions, celery and parsley. Add salt and pepper and olive and vinegar to taste. Fill the cored tomatoes with the mixture. Chill and serve as salad.
This is a very refreshing recipe and great with kabobs or steaks on the grill. Goes without saying that only the best with fresh from the garden tomatoes. Enjoy!
