Fruit Cocktail Cake

Ingredients List


2 cups flour
1 1/2 cups sugar
2 teas baking soda
1/2 teas salt
2 eggs
2 cups fruit cocktail (undrained)


Boil together for 2 minutes

3/4 cup brown sugar
1/2 cup evap milk
1 cup flake coconut
1/2 cup margarine
1 teas vanilla

Preparation Instructions

Mix all together and beat for 2 min. Pour into a greased 9 x 13 pan. Sprinkle 1/2 cup brown sugar and 1 cup chopped pecans on top of batter. Bake at 350 degrees for 40 min. Immediately after taking cake out of oven, pour on icing and leave until cool.

This recipe has been in our family for over 30 years, all I remember is that my sister Bonnie made it and gave the recipe to me.
