Ingredients List
1/2 lb Keilbasa per person
1/2 lb raw shrimp in shell per person
red skinned potatoes to feed your crowd
1 ear of corn per person
2 lemons
cayenne pepper
a few whole cloves
garlic cloves to taste
2 bay leaves
1/2 tsp or more Old Bay Seasoning
Black Pepper
Tabasco
2 large onions, quartered
Clams
Crabs, optional
Preparation Instructions
Boil water in large kettle on outdoor cooker (or indoor stove)Season water with salt and seasonings including the two lemons. Add potatoes and cook 10 minutes. Add sausage and onions. Bring back to a boil. When potatoes are almost tender, add corn and crabs. Bring to boil, add shrimp and clams and boil until shrimp are pink and clams open. Drain and pour into large platters or disposable alum. roasting pans. Lots of butter and dipping sauces should be close by.

A good friend of mine that was born and raised On HI makes this for me several times a year. When he was growing up, this was every day food because all the ingredients were there. The only thing different now is the spices he adds. This is true Hatteras eating. Enjoy!
