The anniversary of Mom's passing was crossed recently so I have been making some of her recipes like the pecan cheese crisps. This recipe made me smile because it has mushrooms in it and my father had a mushroom phobia. He never knew Mom blitzed the mushrooms in the blender so he didn't see them. She did that quite often. This is her beef and spinach bake, ready for the oven.

I'm fine, Bent. She's been gone for twenty years, she had a rare genetic cancer and passed away at a young age. My brother has her recipe box and I took pictures of my favorites. My grandmother's recipe box disappeared somehow but I know many of Mom's recipes were copied from her mother and grandmother. I got two cast iron pans from Mom, the 10" pictured was hers and probably her mother's.

Be thankful you have Mom's recipes written down or at the very least committed to memory! Making and eating Mom's food is a special way to honor her memory.

I am thankful, BF. It reminds me of all the funny antics that went along with those days. When I first moved out of my parents house, I made something that called for shredded cheese and it didn't come out right. Mom knew what went wrong and showed up with a box grater.

'I never use store bought shredded cheese', she said, 'it doesn't melt right.'
