This is delightful stuff! We'll be taking some to Charleston, WV, tomorrow when we head south. Served with Oliverio's sauce, to boot! My BIL, now in Richmond, VA, misses them badly, as does my SIL, now in Greensboro, NC. The whole "fam damily" will be in for Mothers' Day.

Squizzie - we'll be stopping at Tudor's Bisquit World for breakfast. Too bad I have no OBX sand left to leave at the gas pumps for you!

MM, actually I'd like to have your "yallereyed" bean and ramp burrito recipe. Hooooooo doggy!

I don't really have a recipe per se, rarely do if I'm cooking stuff that I've done for years. We get the dried yellow eye beans from a co-op. They're grown in WV. They have a natural buttery flavor to them. I use cumin, cilantro, oregano and dried chipotles, all added 3/4 through the bean cooking process. I add the chopped ramps (incluging the green stalks) after the beans are thoroughly cooked, just minutes before removing the pot from the stove.

I also make pickled eggs with ramps. I use them in homemade mustard, too!

I waved from the parking lot! Tudaor's breakfast was excellent, of course!

AAAAAAAAwwwwww I am so sad! LOL! Hey MM there is a new restuarant in town. I think the name is Laginappe. It is a cajun style place, small, right across from the bus terminal in Clarksburg. ASBSOLUTELY the BEST food in town now! Some is hot, but it is fantastic. Great guy that owns it, he is already looking for a bigger place, I think he has only been there about 6 months or less...try it out when you can...

PS...those gas prices sure took a jump today at Tudor's $3.29 a gallon. I hear in Motown it is about $2.89 to $2.99, go figure!??!

Thanks MM. I'll try the process next spring and see what happens. Have you ever tried pickled ramps for cooking? Just curious how close they would be to the fresh variety.

BTW, have you ever tried the ramp wine made at a winery near Summersville? My son gave me a bottle a couple years ago. It was.........interesting.

Lagniappe is Cajun/Creole for "an unexpected gift". A friend works in downtown Clarksburg and likes Cajun food, too. I'm surprised he hasn't mentioned the restaurant. We'll check it out ASAP. "Backwoods Grill" here in Fairmont has an excellent Muffaletta! I worked and lived in Baton Rouge and New Iberia, LA, for nearly 18 months in the late 70's and fell in love with the region. If I ever HAD to leave WV it would be my first choice for relocation.

Pickled ramps are OK in cooking but lose something in the process. I like snacking on the ones from the pickled egg jar. I made a small batch of ramp and mead wine several years ago on a lark and was pleasantly surprised by the outcome. The ramp pungency was not very evident and seemed to give the wine a nice dry edge. Don't remember where he got it but a friend said a bottle of the commercial stuff that he bought was wretched.

Believe me, I love Colo's pepperoni buns and Muriale's sketti, but when I think of WV soul food, I think of the great Southern food over in the Eastern Panhandle ... where I grew up! Fried chicken, sweet potato casserole, crab cakes, roastin' ears, ham, tomatoes and cukes, biscuits, coconut layer cake, and of course, gallons of ice cold sweet tea.

Now, to me, THAT is soul food.

That sounds awesome to me! YuM! LOL!
