Are there ahny low carb dieters out there? I went on the low carb diet yesterday and want to hear what fellow low-carb dieters like to eat.

Good Luck! Will.. Im starting today but with low-cal/low fat diet.
Breakfast was a slice of whole grain toast with a thin layer of peanut butter and thin slices of apple on top and diet Coke. I think Ill make some coffee to have before lunch.

Yeah, the low carb diet really works. My neice lost alot doing that diet too. I have high BP so I dont think I need all the fat and Im 56 yrs old.. Will is young ...He will be fine on it.

Flipflops, I know what you mean about the cake.. I have this great layered blueberry desert in the fridg. that is calling my name.. I wish my husband would hurry and finish it off. Im not listing to it though.. I have to get some weight off my knees.

NC, a friend of mine from work (who is in her 50's) did the Atkins diet a few years back. She has high BP and high cholesterol, but with this diet, she was able to cut down on her BP med and her cholesterol came down tremendously....she has since gone to the Weight Watcher's diet and continues to keep the weight off. Guess you should check with your doctor before making any drastic changes though.

Hey Will,My husband and I have been on a low carb diet since July,when Brian was diagnosed as a type 2 diabetic.It has been good for the whole household.He of course has lost over 40 pounds while I have only lost about 18(you men!)It sure has been a lifestyle change for us.Wait until you start reading packages.There are many hidden carbs lurking out there. I started low carb today. For breakfast I had lettuce and nosalt swiss cheese rollups and one of those small 2%low fat cottage cheese cups. I just had my a.m. snack of celery with peanut butter.

One of my favorite dinners to fix is half a green pepper stuffed with tuna salad (tuna - rinsed and drained, chopped bell pepper, celery, mixed with mayo and lowfat cream cheese. Top it off with parmesean cheese or low-fat mozzeralla. Pop it in the microwave and zap it about 3-4 mins.

My husband has been very successful w/ the low carb diet. Matter of fact, I'm heading out to Sam's Warehouse to stock our freezer & fridge with all the things he loves to eat. My suggetion is to make sure you have lots of things to choose from so you don't get bored eating the same thing over & over again. My huband likes to munch on sunflower seeds, sliced cheese, pepperoni, sliced turkey or ham, sugar free jello....there is carb free cool whip too. If you like seafood, shrimp has no fat or carbs....just watch the cocktail sauce cause it does contain sugar.

Last year my husband found out he is a type 2 diabetic. We also are on a low carb diet. He lost 30 lbs in 4 months just cutting back on carbs. It is really amazing how fast it comes off when you start watching them.
we also learned when things say sugar free they still have carbs in them . Be carefull read all lables

Somebody just mentioned the glycemic index. I lost about 115 lbs and my wife lost 55 in 2000-2001. We eat a low-glycemic, whole foods diet and hike for exercise. We've managed to keep our weight off for over 6 years now. We eat carbohydrates, but favor the slowly digested ones low on the glycemic index (like beans, barley, non-starchy veggies, etc). We also watch our fat intake steering clear of saturated fats, favoring walnuts and olive oil. We stay away from processed foods. Some would call us health-nuts now, but it's worked for us and we're sticking with it.

I am insulin-resistant or pre-diabetic and I just started the low glycemic index. I hope to have the fantastic results like you guys. Any tips or suggestions of recipes would be great. The 12 year old in my pix is a tough customer when it comes to dinner. He's a meat n potatoes kid.

My husband and I were on the South Beach Diet last year and have just started back on it again this week. I love this method of eating/dieting, it all makes sense!!

Here is a site my MIL gave us with some great recipes for breakfast, lunch, dinner, snacks, etc. It also breaks it down for Phase I, Phase II and Phase III. We've had several dishes and have been very pleased - kids as well!

I can understand it would be tough with other members of your family not on board with lifestyle changes. I feel fortunate that my wife was of a mind adopt healthier habits at the same time I was. As for recipes...we eat lots of salads for lunches, but filling ones with dark greens, broccoli and beans and sometimes a little lean meat. For dinner we tend to eat lots of soups and stews from the pressure cooker (faster than the microwave for lots of things). Made with lots of veggies, beans, low-gi whole grains (barley, quinoa, etc). For breakfast, either an egg white omelet with vegetables, or hot cereal (barley, quinoa or oat groats) with a little low-fat yogurt, walnuts and apple or berries.
The best advice I can give you about eating low-gi is, stay away from processed foods and if you don't know already, learn to cook for yourself. We carry a lunch in a cooler to work everyday. If we travel, we tote our food along. I was also becoming diabetic and had hypertension when I began. Both dropped to normal after the lifestyle changes kicked in.

Atkins and other low carb diets have nothing to do with fat intake - in fact you can pretty much ignore fat when you don't ingest it with accompanying carbs your body will use it for energy instead of storing it. I did induction phase almost 10 years ago and then just maintained by not eating white - no refined sugar or refined bleached, processed wheat products. One of the keys to diet is something I haven't seen mentioned here in the thread - EAT OFTEN! If you allow yourself to be hungry the chemical signal to your body is to store energy the next time it becomes available. I lost most when eating snacks almost every hour or so. The hardest thing to replace in a low carb diet is salty/crunchy and pork rinds got old pretty quick. My personal fave is a trail mix of Ghirardelli dark chocolate drops and cashews with some raisins thrown in. I aalso lowered my BP (now about 70/110, blood sugar, and hd/ld ratios while doing exactly what conventional wisdom said would hurt me. Now general science had caught up and we have Atkins, Eades protein power, South Beach, Zone diet, sugar busters and maore all practicing healthy science. A doctor once said that eating meat would give me high cholestorol because the cow had cholestorol. When I pointed out that the cow was a vegetarian he scowled. Ever see a fat carnivore? Even male lions are healthy. And Inuit peoples whose diet is over 85% fat have no heart problems. It is the carbs - thank goodness science is coming around because if I couldn't have my buttermilk ranch with a salad and a little rare steak I'd still be fat, puzzled, and unhappy Sad smiley Dinner is sreved!
