My MIL was diagnosed over 20yrs ago before it was even heard of. Once she was diagnosed it did not take long for her to feel better but if she ate gluten by accident she would get very ill again. My son does not have celiac but due to being autistic it was recommended that he go GF. Is it possible that you also have Crohn's disease? It is not uncommon to have both. Many stores and restaurants are now GF friendly so you won't have much trouble finding good things to eat. Harris Teeter even has a place on their website that lists all their GF products.
