Roast Chicken with Vegetables




Played with the following recipe. Very easy, one skillet meal. Reduced the minced garlic a bit, as mentioned in the comments, even thought I like garlic.

What I did:

Preheat oved to 450 F. Joy of Cooking does 450 – 350 for roast chicken.

Mix sea salt, freshly ground pepper, and garlic powder. Season cavity of chicken and fill with sliced lemon, onion, celery, and a few butter pieces. Seal cavity with toothpicks and tie legs together. Season outside of chicken with seasoning mixture, place in no. 10 skillet on a bed of diced onion. Brush with melted butter.

Place skillet in oven and reduce heat to 350 F.

Toss potatoes and sliced onion, carrots, and celery with a little olive oil. Add minced garlic.

Add vegetables around chicken after an hour and brush chicken with melted butter.

Cook an additional 45 minutes or until done. Tent chicken towards end, if needed.

Remove chicken to carving board, tent, and rest 10 minutes. If vegetables are not done, stir in the released liquid and place back in oven while chicken is resting. Enjoy!

The link places the vegetables on the bed of all the vegetables at the start. Joy of Cooking mentions that vegetables can be added 45 minutes from the end, so that's what I did. They needed a little more cooking, so I removed the chicken to tent and rest, stirred the vegetables in the liquid and finished them in the final 10 minutes while the chicken rested.

Leftovers for a few nights. smiley

I never roasted a chicken in a pan before...and was looking on YouTube for instructions on how to truss one when I saw someone doing that, so I tried it...the same week as you! It turned out great. Got some tri-colored carrots at Lidl (yellow, purple and orange) and they looked so nice under the chicken. Hope you enjoyed yours...it sure was pretty!

That is strange. I'd never roasted a chicken in a skillet either. Remarkably easy.

Roaster chickens were 59 cents a pound at Price Chopper with a coupon, so I decided to do it. Bought a second, 5-pound roaster later in the week and put it in the freezer. smiley
