Hmm. I am not sure I am totally following what she is saying, although I will say this: I am much less likely to go anywhere that doesn't treat me better than I can treat myself at home. What she is describing sounds like one step up from a food truck. No thanks. I love food trucks but there is something to being served delicious food by people who do it well. It probably is hard to find/train/maintain staff in Kinston. I have been to her restaurant and it was wonderful. It's also out in the middle of nowhere and people have to go out of their way to get there. You have to do more than just serve good food. She, along with Mother Earth, was doing a great job of creating a destination when the pandemic screwed life up for everyone. I don't think things will be back to "normal" for another 8 or so years...I think it will take a decade for the ripples to fade. But in the meantime, you have to do something to have a business, so maybe this is what it will take for her. I wish her luck. This hasn't been a good few years for her, in general.

Interesting. Reviewing the Outer Banks Restaurant Scene I see room for change/adjustment to make it a better experience. I do admit that I'm a local resident and eat out only once or twice a month or special occasions. The Outer Banks much to my dismay has overgrown. Larger and Larger groups occupy the McMansions. There are very, very few Restaurants that take reservations and how many do you know that can Seat and Properly Serve a group of 12 or more. If this situation was addressed and ADVERTISED, I'm sure that would be a plus for business. It's recognized that getting employees is a problem, you will notice I didn't say "Good" or Experienced. From my experience you can not have an inexperienced Host/Hostess running the show, especially teenagers. Sorry. The upfront handling of crowds and/or possible food problems is a Science. Just sayn!

I didn’t know that. All these years I thought Chef and the Farmer was in downtown Kinston.

LOL, EZ! Downtown Keenstin is a hustlin' and a bustlin' fer shure! Looks like Viv's Kitchen is making food and trucking it to these little installations that sound like a new age Automat. Good luck, Hon. Bless Her Heart.

What I’ve noticed the last 2+ years is that even chain restaurants have tailored their hours to accommodate staffing and supplies. Lots of independent eateries have tweaked their hours/days of operation, hardly anyone stays open late nights anymore.

Paring back menus, specifically lunchtime. Offering more extended breakfast/tea times to support locals dining on off peak hours. More To-Go, catering, food truck and event/festival offerings. I personally like getting back to basics, like great diners and cafeterias.

Her place is indeed in downtown Kinston...about a half a block off North Queen Street.
