Sausage, Bacon, stewed tomatoes, onions, baby clams, bay leaves, garlic, parsley, dill weed, hot sauce, Worcestershire sauce and subbed potatoes for heart of palm since I'm on a low carb diet. (Already lost 20lbs).

Sounds like a yummy dinner you have going there!!

Yep...we love fresh collards. Bottom round roast and baked potatoes. We have totally gotten off of the keto diet the past two months!!! Christmas did us in.... Just have to exercise more!!!! I'm working my arm weights and chase dogs outside playing stick!

One of my favorite fish and I have a secret hole that I pull them out of the Chesapeake. Sweet, flaky and mild. Looks great BF. Savor the flavor.

Blue Catfish are considered invasive up this way, and are taking over a number of waterways. The States of Delaware and Maryland have been encouraging people to take as many as they can.

In Delaware even if you do not plan on eating it, you are encouraged to kill it and DO NOT RETURN IT TO THE WATER.

What Bill said. Blue catfish are being blamed for blue crab population declines in the Chesapeake Bay.. The Maryland Governor's request for Federal funds was rejected recently and the Virginia Governor is suggesting a bounty program. Blue Catfish were introduced in Virginia fresh water rivers in the 1970's but now there is a bounty on their heads........trust the science? The solution apparently is to eat more catfish.

Your grandma would be proud all this cooking you do. Cellphones are awful I thought I read FRESH BLUE CRAB CATFISH and thought maybe we were stuffing a fish with crabmeat darn it.

The General Assembly of the great state of Maryland wants to change the name of the snakehead to “Chesapeake Channa” since it may be more appealing to people to eat them . Now I have had snakehead and it is good but Maryland has a lot of problems with crime, drugs ,car and retail theft along with our just recently found guilty States Attorney . Not sure this will name change will work , any thoughts !

Changing the name is not going to do anything. I know a lot of folks to love to fish for them and then toss them, don't know many that actually eat them.

I fish a lot on the Rappahannock River in Virginia and enjoy fishing for the Blue cats. They are plentiful and the 3- 4 pounders are outstanding table fare.

Snakeheads have a PR problem...if they are thinking of taking it to the table, but there are lots of suggestions for how to cook it.

I caught a Blue Catfish off the dock last summer and threw it back since I thought it was a salt water catfish. I had always been told that salt water cats are no good to eat but I guess the water is brackish enough for them in the ICW. I thought the meat was excellent. I'll definitely keep the next one.

I caught a Blue Catfish off the dock last summer and threw it back since I thought it was a salt water catfish. Saltwater catfish are going to be Gafftopsail Catfish (sail cat). I believe southern NC is about as far north as they come. They are thick in Florida. I've never caught nor eaten one. They have a unique look to them with very long, wispy fins unlike freshwater catfish you may be accustomed to seeing. They will give you quite a painful sting and a couple years back a kid in Florida had to be airlifted after having his chest punctured by one.

I actually got nailed by one as a kid trying to take one out of a gill net on Folly Beach in SC. Totally different looking but I wasn't sure if the blue was another type of saltwater cat. Ever since that sting I been very leery of catfish.

Fish fat is what tastes fishy or strong. The bigger catfish have the most. The yellowish fat is stored along the back, belly and lateral line. Trim those off the fillets before cooking. It makes all the difference. Even if the taste of it doesn't bother you, toxins are usually stored in fatty tissue so that is reason enough for me to trim it off.

Looks like we have Hardhead catfish here, too. This guy's blog says they're no good for the table and they do look more similar to freshwater catfish. I don't mess with catfish either way. I've caught them on the James River with my dad as a kid, but can't recall if we even kept them. I do like a fried catfish sandwich and I'm WAY overdue for one. Click to follow link...

Not sure where you grew up, but this is exactly the view (my grand fathers anyway) on catfish from the bayou.

Fast forward, some of the best fish I have ever tasted is/was catfish.
